Broccoli and Cauliflower Salad

recipe-entreeTemperatures are rising and summer is quickly approaching. This makes me long for summer vegetable salads. But who says we must wait for summer to officially arrive to start enjoying them? Crisp, fresh veggies in a creamy sauce are perfect for any meal, including a pre-Summer picnic on the deck or in the backyard.

Ingredients

1 bunch broccoli

1 head cauliflower

3 Roma tomatoes

2 hard-boiled eggs

6 bacon slices, cooked

1 cup mayonnaise

1/3 cup white sugar

2 T cider vinegar

½ t onion powder

Cut broccoli and cauliflower into bite-sized pieces and place in large bowl. Seed and chop tomatoes. Chop eggs and crumble bacon. Place tomatoes, eggs and bacon in bowl with broccoli and cauliflower. In a separate bowl, mix together mayo, sugar, vinegar and onion powder. Pour over vegetable mixture and combine. Chill until ready to serve.
