Red Cabbage Salad

recipe-entreeThis is a favorite salad of mine, and it gets requested for most every family gathering. It’s pretty simple to toss together, but the toasted almonds, sesame seeds, and sesame oil add a wonderful depth of flavor. Try taking this to your next picnic or reunion.

 

Salad Ingredients

½ head red cabbage

½ head green cabbage

1 package chicken flavored Ramen noodles

2 T slivered almonds, toasted

2 T sesame seeds, toasted

 

Dressing Ingredients

½ cup olive oil

1 t sesame oil

2 T cider vinegar

2 T brown sugar

1 t salt

½ t onion powder

¼ t pepper

1 package chicken dry soup base (from Ramen noodle package)

 

Directions

Shred the cabbage, place in a large bowl.

In a separate bowl, mix dressing ingredients together, making sure to break up any brown sugar lumps. Pour the dressing over the cabbage and toss to coat.

To toast the almonds, place them in a dry nonstick skillet over low heat. Stir the almonds until lightly brown, then move to a plate to cool. Repeat the procedure with the sesame seeds. Watch them carefully as they can easily burn.

Crumble the uncooked Ramen noodles and mix with the toasted almonds and sesame seeds. Just before serving, sprinkle the Ramen noodle mixture over the cabbage and toss together.
