Slow Cooker Balsamic Beef

When I know it will be a long day, I like to plan ahead to use my slow cooker, and this has become one of my family’s favorite slow cooker meals. Seriously, we could eat this every other day. The reduced sauce provides a rich, deep flavor with just the right amount of sweetness. This dish pairs well with roasted cauliflower or grilled zucchini.

Ingredients:

3-4 lbs beef stew meat

2 cups beef stock

½ cup balsamic vinegar

½ cup brown sugar

1 T chopped garlic

1 T soy sauce

1 t salt

 

Directions:

Place beef in slow cooker. In a medium bowl, whisk together the rest of the ingredients and pour over beef. Cook on low for 6 – 8 hours.

When beef is done, remove to a bowl and cover to keep warm. Pour sauce into a saucepan and place over medium high heat. Reduce by about half, until thickened. Pour sauce over beef and serve.
