Cauliflower “Rice”

recipe-entreeThere is not actually any rice in this recipe, it uses cauliflower that has been grated to look like rice. I have been hesitant to try this as I thought it would be time consuming. Was I ever wrong! This is one of the easiest side dishes I have made in a long time. I used my food processor with the grater attachment to rice the cauliflower, and it came out perfectly. Just add butter, season with salt and pepper, and microwave. A wonderful accompaniment to meatloaf or artichoke chicken (next week’s recipe!).

 

Ingredients:

1 head cauliflower

2 T butter

½ t salt

¼ t pepper

 

Directions:

Remove the leaves and core from the cauliflower. Grate the cauliflower using either a food processor with the grater attachment or a cheese grater.

Place the grated cauliflower, butter, salt, and pepper in a microwave safe bowl. Cover with plastic wrap and poke a few holes in the plastic. Microwave on high for 4 minutes. Stir the cauliflower and microwave for an additional 4 minutes. Check for tenderness – it shouldn’t be mushy. Continue to microwave, a minute at a time, until desired tenderness. Season with additional salt and pepper to taste.
