Roasted Carrots

recipe-entreeOven roasting has become my favorite way to cook vegetables, especially carrots. The char the carrots get from roasting brings out the natural sweetness in them, making them incredibly delicious. You can keep the seasonings simple, like my recipe with salt and pepper, or you can change it up to fit the other dishes you are cooking. Try a spicy version with cumin, ginger, garlic and a bit of crushed red pepper or a sweet one with honey, cinnamon and nutmeg. Or go a different simple route with shallots and rosemary.

Ingredients:

1 – 1 ½ lbs carrots, peeled and sliced into half inch matchsticks

1 ½ T olive oil

½ t salt

¼ t pepper

Directions:

Preheat oven to 425˚F.

Toss carrots in olive oil. Sprinkle with salt and pepper and toss again.

Place on baking sheet in single layer. Bake 20-25 minutes until tender, turning at least once during roasting. Add additional salt and pepper to taste.
