Chocolate Marshmallow Pie

recipe-dessertI remember the first time my mother made this pie. I was mesmerized while watching her fold the whipped cream into the smooth chocolate mixture. And when I finally got to taste the finished pie, it was as good as I imagined it would be. This pie is simple to make with few ingredients, and there are many ways to vary the original recipe. Use chocolate bars with nuts for added texture to the pie. Try a little dark chocolate in place of some of the milk chocolate for a more grown up tasting version. Top the pie with fresh raspberries or make a raspberry coulis to serve alongside. Instead of using one large pie plate, make individual pies using small tart pans or ramekins. However you make it, I am certain you will enjoy it as much as I do.

Crust Ingredients:
18 honey graham crackers
2 T powdered sugar
⅓ cup butter

Crust Directions:

Crush the graham crackers into crumbs and mix in the powdered sugar. Melt the butter and add to graham cracker mixture until combined. Spread into pie plate, pressing down, and set aside.

Filling Ingredients:
15 large marshmallows
½ cup milk
4 milk chocolate candy bars
1 cup whipping cream
Sweetened whipped cream, optional
Chocolate shavings, optional
Toasted almonds, optional

Filling Directions:

Heat the marshmallows with the milk in a double boiler. Stir until melted together, then take off the heat.

Roughly chop the chocolate bars and add to the marshmallow mixture while still hot. Stir until chocolate is melted, then set aside to cool.

Whip the cream until stiff peaks form and fold into the cooled chocolate mixture. Spread over crust in pie plate. Refrigerate overnight. When ready to serve, garnish with sweetened whipped cream, chocolate shavings, and toasted almonds, if desired.
