Loaded Mashed Cauliflower

recipe-entreeFor a while now, my family has been trying to reduce the amount of carbohydrates we eat. One of our favorite low carb veggies is cauliflower. We eat it raw, in salads, roasted, riced and mashed. This recipe for mashed cauliflower is made even more delicious by adding cheddar cheese and bacon.

Ingredients:

1 head cauliflower, cut into florets

¼ cup cream

2 T butter

½ t salt

¼ t pepper

⅛ t garlic powder

⅛ t onion powder

½ cup shredded cheddar cheese

4 slices bacon, cooked and crumbled

Directions:

Place the cauliflower, cream, butter, salt, pepper, garlic powder and onion powder in a microwave safe dish. Microwave on high for 18 – 20 minutes, or until soft.

Transfer the cauliflower mixture to a food processor. Add the cheese and bacon. Process until smooth. Season with additional salt and pepper, to taste.
