Cheeseburger Cauliflower Casserole

recipe-entreeAs a family, we have been trying to reduce the amount of carbohydrates we eat for some time now. We love cauliflower, which is a low carb veggie, so any new dish I can make that incorporates it is a winner. This recipe is similar to a cheeseburger macaroni casserole, but replaces the macaroni with cauliflower. It is so good!

Ingredients:

1 ½ lbs ground beef

1 small onion, diced

1 14.5 oz can petite diced tomatoes, drained

½ t onion powder

½ t salt

¼ t garlic powder

¼ t black pepper

1 head of cauliflower, cut into florets

1 ½ cups grated cheddar cheese

¼ cup Parmesan cheese

Directions:

Preheat oven to 350˚.

Place ground beef and onion in a skillet set over medium high heat. Cook until beef is brown and onion is soft. Drain off fat. Mix in tomatoes, onion powder, garlic powder, salt and pepper.

While beef and onion are cooking, steam cauliflower. It can be steamed on the stove or in the microwave. Add a little water to the cooking vessel and add cauliflower florets. Steam until slightly softened, but not mushy. (It will continue to cook some in the oven.)

In a casserole dish, combine beef mixture with cauliflower, cheddar and Parmesan cheeses. Place in oven and bake for 10-15 minutes, until cheese is melted.
