Chocolate Chip Cookie Bars

recipe-dessertI think my favorite cookie has to be the traditional chocolate chip cookie. This recipe takes that cookie and makes a bar out of it, which to me is even better. The combination of chewiness that comes from a bar and the classic taste of chocolate chip cookie is a match made in heaven.

Ingredients:

½ cup brown sugar, packed

¼ cup white sugar

½ cup butter (1 stick), softened

1 t vanilla

1 egg

1¼ cups + 2 T flour

½ t baking soda

¼ t salt

6 oz. semi-sweet chocolate chips (½ bag)

Directions:

Preheat oven to 350˚F. Spray an 8×8” baking dish with cooking spray.

In a large bowl, mix together sugars, butter and vanilla until light in color and fluffy. Beat in egg until well combined. Mix in flour, baking soda and salt. Stir in chocolate chips.

Spread batter into prepared baking dish. Bake about 25 minutes, until top is golden brown and middle is firm to the touch. Remove from oven and place on cooling rack to cool.
