Almond Bark Cookies

recipe-dessertChristmas is just around the corner. So many goodies to make, so little time! This recipe is a quick one, but sure to get rave reviews. They’re technically not cookies since you spread them out and break apart into pieces once hardened, but you could drop them by spoonfuls onto the waxed paper, making them look more like cookies. I personally like the messy broken pieces – lots of fun to nibble on.

Ingredients:

4 cups honeycomb cereal

1 cup mini marshmallows

1 cup chopped walnuts (pecans also work great)

12 oz white candy coating (almond bark)

Directions:

Place cereal, marshmallows, and nuts in a large bowl.

Melt bark in microwave safe bowl according to package directions, being careful not to burn. Pour melted bark over cereal mixture and stir to combine.

Spread mixture out onto waxed paper and let harden. Break into pieces and store in airtight container.
