Zucchini and Squash Au Gratin

recipe-entreeSquash in all its varieties becomes plentiful during the summer home garden season. Here’s one of my favorite simple ways to use it that can be on the table in around 30 minutes.

Ingredients:

2 T butter

2 cloves garlic, chopped

3 medium zucchini, squash, or combination, cut into ¼” slices

½ cup cream

¼ cup grated Parmesan cheese

¼ t onion powder

¼ t salt

⅛ t pepper

¾ cup shredded cheddar cheese

Directions:

Preheat oven to 400˚F.

Melt butter in large, oven proof skillet* over medium heat. Once melted, add garlic. Stir to keep from burning. Once fragrance of garlic begins to release, add zucchini, squash, cream, Parmesan, onion powder, salt, and pepper. Stir and cook for 5 minutes; mixture should be bubbling around the edges.

Sprinkle cheddar cheese evenly over top of squash mixture. Place skillet in oven and bake for 20-25 minutes until cheese on top is golden brown.

* If you don’t have an oven proof skillet, begin cooking on stovetop in a regular skillet and transfer mixture to a baking dish before sprinkling with cheddar cheese.
