Strawberry Bread

recipe-dessertI bought a whole lot of strawberries about a week ago, and we didn’t quite get them all eaten before they started to look less than fresh. But no worries! Strawberry bread to the rescue! It’s the perfectly tasty way to use up fruit before it goes bad.

Ingredients:

1 egg

1 cup sugar

1 cup buttermilk*

⅓ cup vegetable oil

2 t vanilla

1 cup flour

1 t baking soda

½ t salt

¼ t cinnamon

1 ½ cups fresh strawberries, chopped

Directions:

Preheat oven to 350˚F. Grease a 9×5” loaf pan and set aside.

In a large mixing bowl, mix egg and sugar until thoroughly combined. Add buttermilk, oil, and vanilla and mix well.

Add flour, baking soda, salt, and cinnamon to wet mixture and mix until combined. Gently fold in strawberries.

Pour mixture into baking dish and bake for 60-70 minutes. Test bread with a toothpick – if a toothpick comes out clean when inserted in the center of the bread, it is done baking. If there are sticky crumbs on the toothpick, bake another 5 minutes. Bread should be golden brown on top. Remove from oven and let cool 10 minutes in pan before removing to cooling rack to finish cooling.
