Parmesan Crusted Potatoes

recipe-entreePotatoes are a go-to side dish for many families, and there are tons of ways to prepare them. I’m always on the lookout for new and easy to make potato recipes. This one fits the bill! It is so simple to prepare and comes out tasting fantastic.

Ingredients:

1 ½ lbs small potatoes

¾ cup grated Parmesan cheese

¾ t salt

½ t dried oregano

¼ t onion powder

¼ t garlic powder

¼ t paprika

¼ t pepper

Directions:

Preheat oven to 400˚F.

Pour oil into 9×13” baking dish and spread around so it coats the entire bottom of the dish.

In a small bowl, combine Parmesan, salt, oregano, onion powder, garlic powder, paprika, and pepper. Evenly sprinkle cheese mixture on top of oil in dish so that it covers entire bottom of dish. (Don’t try to spread the cheese mixture; it will clump together with the oil.)

Slice potatoes in half. Place potatoes, cut side down, on top of cheese mixture in dish. Press them down into the mixture.

Bake for 30-40 minutes until potatoes are soft when pierced with a fork and cheese is browned. Remove from oven and let sit about 5 minutes. Use a knife to cut cheese around potatoes and flip potatoes over in dish using a spatula. Serve warm.
