Thanksgiving Fair with Local Flair: Extra Cheesy Homemade Macaroni and Cheese

Thanksgiving can be one of the happiest holidays of the year, but can, at the same time, be one of the most stressful. This is doubly true for those families who are hosting the holiday for the first time. To make your holiday season just a little easier, Jefferson County Post feature writer Elizabeth Lane presents Thanksgiving Fare with Local Flair, a series of local-favorite recipes that will help alleviate that last minute scramble for dishes. For this third entry, we’ll be making a homemade helping of extra cheesy mac n’ cheese. For an extra cheese that’s sure to please you will need:

1 pound box of Macaroni noodles

2 pound block of Velveeta Cheese

1 stick of butter

1 small can of evaporated milk

Salt and pepper to taste

To make this delicious dish:

Cook noodles as directed on box and then drain

Add evaporated milk and butter to the noodles

Cut cheese into chucks and add to noodle mixture

Cook on low heat until melted

Add extra cheese if you would like (2 cups of shredded cheddar suggested)

Stir together until cheese is melted

Let slightly cool and then serve

This recipe is sure to please young and old alike. Whether preparing a traditional dinner in your household, or something special just for the holiday, this dish can be adapted to any occasion.
