Flourless Oatmeal Blueberry Muffin – in the Microwave!
One of my favorite kinds of food is bread. Anything bready, and I’m there! That’s why I love this recipe. It’s super quick and very moist. It’s not exactly a pick-up-and-eat-with-your-hands kind of muffin, but it is wonderful with a pairing of Greek yogurt and a spoon. I appreciate the flourless aspect of this muffin since I have family and friends who are allergic to wheat, and this provides a tasty alternative to the traditional muffin.
Ingredients
1 egg
2 T applesauce
½ – 1 T honey or agave nectar
¼ cup ground quick oats
Dash salt
Dash baking soda
Dash cinnamon
¼ cup fresh blueberries
Additional honey or agave nectar, for drizzling
Low-fat or non-fat Greek yogurt
In a microwave safe mug, mix together egg, applesauce, and honey or agave nectar. Mix in ground oats, salt, baking soda, and cinnamon until well combined. Fold in blueberries.
Place mug in microwave and cook for 1 minute. If mixture does not seem set, cook an additional 15 seconds. As muffin cooks, it may rise above the rim of the mug, but will fall back down when microwave stops. Turn out of mug into bowl. Drizzle with a little honey or agave nectar and serve with Greek yogurt.
