Homemade Peanut Butter
I recently decided to try making peanut butter at home. One word describes the result – amazing! I will never purchase store bought peanut butter again. This was crazy easy and really tastes so much better than the store versions. This recipe makes quite a bit of peanut butter, so feel free to cut it in half if you won’t eat that much within a month’s time. Since there are no added preservatives (other than salt for taste), it won’t keep as long as the purchased varieties, but I know that won’t be a problem around my house. Also, if you notice a little oil separating from the peanut butter, that’s okay, just stir it back in.
Ingredients
16 oz dry roasted peanuts (unsalted)
1 t salt
Optional: 2 – 3 T agave nectar
1 t canola or peanut oil, if too dry
Place peanuts in a food processor. Process for 2 minutes. Add salt and scrape down sides. Mixture will be very crumbly. Continue to process for another 8 minutes, scraping down sides every 2 minutes. When smooth and creamy, add agave nectar, if desired, and process until combined. Place in airtight container in refrigerator. This should last up to one month.
