Goat Cheese and Blueberry Grilled Cheese Sandwich

recipe-entreeWithin the last year, my daughter has discovered goat cheese, and she cannot get enough of it.  She wants to put it in or on most everything she eats as well as eat it straight from the package.  I have to do some serious portion control with this food obsession.  So when we came across goat cheese encased in blueberries on a recent trip to a specialty foods store, we absolutely had to have it.  Thus the inspiration for this recipe.

Ingredients (makes 3 sandwiches)

6-1” slices French baguette or Italian bread

3 T butter, melted

6 ounces goat cheese

½ cup fresh blueberries

1 T honey, optional

Place goat cheese in a medium size bowl.  Add blueberries and stir together with a fork, breaking up some of the blueberries.  Add honey for a little sweetness, if desired, and set aside.

Preheat grill or grill pan placed on stove to medium heat.  Brush each side of bread slices with melted butter.  Place slices on grill for 1 – 2 minutes until nicely browned (watch carefully so they don’t burn).  Remove slices from grill and spread ⅓ of the cheese mixture onto the grilled side of three slices.  Top each with a slice of bread with grilled side facing cheese mixture.  Place sandwiches back on grill, 1 – 2 minutes per side.  Remove to plate, slice in half, and enjoy.
