One Pot Pasta
There are recipes circulating all over Pinterest for One Pot Pasta dishes. I have recently tried one and was amazed at how great it turned out. I tweaked it a bit to give it more of a sauce and present my version to you here.
Ingredients
13.5 oz box whole wheat linguine
2 cans diced tomatoes, with liquid
4 garlic cloves, diced
2 t dried oregano
1 t onion powder
½ t salt
¼ t pepper
6 fresh basil leaves, chopped
1 T olive oil
3 ½ cups chicken or vegetable stock
Parmesan cheese, for topping
Break linguine in half and place in large stockpot. Add tomatoes, garlic, oregano, onion powder, salt, pepper, basil, oil, and stock. Stir. Heat to boiling, then reduce to simmer, cover, and cook 15-20 minutes, until pasta is al dente. Serve with grated Parmesan cheese.
