Corndog Casserole

recipe-entreeI have an obsession with corndogs. I absolutely love them. The sweet cornbread, crunchy on the outside and cakey on the inside, and the salty hot dog are a combination made in junk food heaven. When I came across a recipe for a corndog casserole, I knew I had to try it. This is a simple to make, slightly healthier version of the classic corndog that satisfies my obsession.

Ingredients

1 package hotdogs

2 8.5 oz. boxes Jiffy cornbread mix

2 eggs

1 cup milk

1½ cups shredded cheddar cheese

Preheat oven to 350ºF. Grease a 9 x 13” pan.

Slice the hotdogs into sixths. Cook the hotdogs in a skillet set over medium heat about 3 minutes.

In a large bowl, mix together cornbread mix, eggs, and milk. Stir in cheese and hotdogs. Spread into prepared pan and bake 20 – 25 minutes, until lightly golden. Be careful not to over bake or the cornbread will be dry.
