Pan-Fried Parmesan Pork

recipe-entreeThis is probably my favorite way to cook pork.  I love the crispiness that the pan-frying gives the pork and the Parmesan cheese in the coating imparts an added depth of flavor.  It also makes an incredible left-over cold sandwich.

 

 

 

Ingredients

5-6 thin cut, boneless pork chops

½ cup flour

½ cup bread crumbs

¼ cup Parmesan cheese, grated

¼ t onion powder

¼ t salt

⅛ t garlic powder

⅛ t pepper

1 egg

2 T milk

1 T olive oil

1 T butter

 

In a shallow bowl, mix together flour, bread crumbs, cheese, onion powder, salt, garlic powder, and pepper.  In a separate shallow bowl, whisk together egg and milk.

Trim pork of any fat.  Dip pork in egg mixture and let excess drip off.  Then dredge pork in flour mixture.  Set aside until ready to use.

Place olive oil and butter in a nonstick skillet set over medium heat.  Once butter has melted, place pork in skillet.  Cook until golden brown, 2-3 minutes per side.  Remove to serving plate.
