Sunflowers, Drying on the Stem

I have enjoyed the sunflowers that are beside the bank in Jefferson City, however, now that they are dying, I was wondering why no one is cutting them down. They look pitiful all bent over and turning brown.

I agree that the fields of sunflowers are lovely, however, beyond being beautiful, they are a viable crop. In order to harvest the sunflower, it must be dried on the stem. While it is true that the flowers are not attractive as they dry, they cannot be utilized until the process is complete. Though they are no longer picture worthy, fulfilling their true worth as a crop is important to both the farmer and the consumer.
