Maple Bacon Mustard Chicken

recipe-entreeI know, the name of the recipe isn’t very clever, but it sums up exactly what this recipe is all about.  Real maple syrup mixed with mustard, add a little crumbled bacon, pour it over chicken, and you’ll get mmmmmm from your family.  Quick and easy to make.  Pair it with my polenta recipe from June 20, 2011 (toss some bacon in that, too).

Ingredients

10 chicken tenders

2 T olive oil

6 slices bacon, cooked and crumbled

⅓ cup real maple syrup

¼ cup yellow mustard

½ t salt

¼ t pepper

Salt, pepper, and garlic powder for seasoning chicken

Directions

Season chicken with salt, pepper, and garlic powder to taste.  Heat olive oil in nonstick skillet over medium high heat.  When oil is hot, add chicken and cook until lightly browned, turning once, about 2 minutes per side.  (Chicken should not be cooked through.)

While chicken is cooking, prepare the sauce.  Mix together maple syrup, mustard, salt, and pepper.  When chicken is lightly browned, pour over sauce mix.  Add bacon.  Stir to coat chicken.  Continue to cook chicken until sauce thickens slightly and chicken is cooked through, about 5 minutes.
