Waffles

Waffles. This dish is everything I love about food – bready, crunchy, buttery, slightly sweet (made even sweeter by the addition of maple syrup) deliciousness. Enough said.

Ingredients

1¾ cups flour

1 T baking powder

1 T sugar

½ t salt

3 eggs

12 T (1½ sticks) unsalted butter, melted and slightly cooled

1½ cups milk

Directions

Preheat waffle iron according to manufacturer’s instructions. (I like a super crunchy and slightly darker waffle, so I usually preheat to medium-high heat.)

In a large bowl, whisk together flour, baking powder, sugar, and salt and set aside.

In a separate bowl, beat eggs well. Mix in melted butter and milk. Pour the wet ingredients into the dry ingredients, and whisk together until just combined.

Pour ½ – 1 cup batter onto hot waffle iron, spreading out a little from the center. Close the lid and bake until golden brown. (The amount of time will depend on your waffle iron. Check after 2 minutes to make sure they don’t get darker than you like.) Serve immediately with warm maple syrup.
