Peanut Butter Cake with Peanut Butter Frosting

For all the peanut butter lovers out there, this one’s for you.  This is a rich, peanut butter cake (starting with a cake mix – love it!) with a deliciously sweet and equally rich peanut butter frosting.  It’s a perfect peanut butter combination sure to satisfy even the biggest peanut butter craving.

Cake Ingredients

1 yellow cake mix (not the pudding kind)

2 eggs

1 cup water

½ cup creamy peanut butter

Frosting Ingredients

4 T unsalted butter

1½ cups sugar

¾ cup milk

1 cup powdered sugar

¼ cup creamy peanut butter

To make the cake:

Preheat oven to 350º.  Grease a 9 x 13 cake pan.

In a large mixing bowl, combine cake mix, eggs, water, and peanut butter and beat with an electric mixer until well combined.

Pour batter into prepared cake pan and bake according to cake mix package directions, until top of cake springs back when touched.  Once cake has cooled, top with peanut butter frosting.

To make the frosting:

Combine butter, sugar, and milk together in a saucepan.  Bring to a boil and boil for 10 minutes, stirring occasionally.

In a separate bowl or food processor, mix together powdered sugar and peanut butter.  Add hot butter mixture to powdered sugar mixture and stir to combine.  The frosting will be hot and slightly runny, but will firm up as it cools.  Pour onto cake immediately and spread to the edges.

* Do not make the frosting until the cake is finished baking.  It will firm up as it cools and will not spread easily when cool.
