Beef Cabbage Soup

recipe-entreeLast week, I was looking for a new soup recipe to try and remembered that my husband absolutely loves the beef cabbage soup from Shoney’s restaurant.  Since we don’t visit there very often, and I really wanted to make soup from home, I decided to search for a recipe.  You will find many of them to choose from online, all very similar.  I came up with the following, taking out some of the things we don’t care for, and it was a huge success.

Ingredients

1 pound ground beef

½ medium onion, diced

½ head cabbage, shredded

1 16 oz can red kidney beans, drained

1 15 oz can crushed tomatoes

6 cups beef stock

1 t salt

½ t pepper

¼ t garlic powder

Directions

In a large stockpot set over medium heat, cook onions until soft.  Add beef and brown; drain off fat and return to pot.  Add remaining ingredients to beef in pot.  Bring to a boil.  Reduce heat to medium-low and simmer about 1 hour.  Add additional salt and pepper to taste.
