Creamy Tomato Basil Soup

recipe-entreeOnce again, it’s the slow cooker to the rescue! This is an easy soup that tastes fantastic. It’s creamy and cheesy and ready when you get home from work. Serve it with sautéed pork chops and roasted asparagus for a flavorful meal.

 

Ingredients:

2 15 oz cans crushed tomatoes

1 14.5 oz can carrots, chopped

1 onion, diced

4 cups chicken stock

¼ cup fresh basil

1 t salt

½ t pepper

1 bay leaf

2 cups half-n-half

1 cup Parmesan cheese, grated

 

Directions:

Place tomatoes, carrots, onion, stock, basil, salt, pepper, and bay leaf in slow cooker. Cook on low for 6-7 hours

About 30 minutes before serving, add the half-n-half and Parmesan cheese. Stir to incorporate the cheese. Add additional salt and pepper to taste.
