Cheesy Barbecue Chicken

recipe-entreeIn my house, we eat a lot of chicken, so I’m always looking for new ways to prepare it. This is a simple preparation that comes out tasting like you put way more effort into it actually takes. And who doesn’t love bacon, cheese, and barbecue sauce?

 

Ingredients:

4 pieces bacon

4 chicken breasts

4 T barbecue sauce (pick your favorite)

½ cup cheddar cheese

½ cup Monterey jack cheese

Salt and pepper

 

Directions:

Cook bacon in a large skillet over medium heat until crisp. Take out bacon and place on paper towels, but leave bacon grease in pan. Crumble the bacon when cool enough to handle.

Preheat oven to 400ºF. Cover chicken with plastic wrap and pound to an even thickness. Liberally coat chicken with salt and pepper. Place chicken in bacon grease in skillet and cook, covered, until outside is browned, about 4-5 minutes per side.

Remove chicken to a baking dish. Spread one tablespoon of barbecue sauce on each piece of chicken, then sprinkle with bacon. Mix cheeses together and place ¼ cup of cheese mixture on each piece of chicken. Place in oven and bake for 8-10 minutes, until cheese is melted and bubbly.
