Easy Chicken Casserole

recipe-entreeThis dish always reminds me of my husband’s grandmother. She would serve this at almost every holiday gathering, and there was never any left over. It’s easy to put together, hence the ‘easy’ in the recipe name, and it also doubles and triples well if you are feeding larger groups.

 

Ingredients:

4 boneless skinless chicken breasts

1 can cream of chicken soup

1 cup sour cream

¼ t onion powder

¼ t salt

⅛ t pepper

1 sleeve Ritz crackers, crushed

 

Directions:

Preheat oven to 350º.

Cook chicken in lightly salted boiling water until no longer pink.

While chicken is cooking, mix together cream of chicken soup, sour cream, onion powder, salt, and pepper in a medium bowl.

When chicken is finished cooking, drain water. Shred chicken and place in bowl with soup mixture. Stir until combined.

Spread chicken mixture into casserole dish and top with crushed crackers. Bake for 30 minutes, until bubbly around the edges.
