Slow Cooker Beef Stew
I love my slow cooker. Some days, it’s my best friend. My slow cooker has multiple settings, including a stovetop setting that allows me to sear meat and cook veggies. This versatility lets me cook this recipe in one pot and not have to get another dish dirty. Hooray for me!
Ingredients:
2 lbs beef stew meat
1 medium onion, diced
1 T olive oil
2 cups beef stock
1 can petite diced tomatoes
4 carrots, peeled and cut into 1” pieces
2 garlic cloves, minced
2 T molasses
2 T Worcestershire sauce
½ t dried oregano
½ t salt
¼ t pepper
Directions:
Heat olive oil in a skillet set over medium-high heat. Once hot, add beef stew meat and onion. Cook, stirring frequently, until onion is soft and meat is browned. Drain off most of the liquid.
Transfer meat and onion mixture to slow cooker. Add remaining ingredients. Cook on low for 6-7 hours or high for 4-5 hours. Season to taste with additional salt and pepper.
