Slow Cooker Ham and Beans

recipe-entreeWith all the cold weather we’ve been having, it’s the perfect time to get out the slow cooker. Whether you’re making a soup, stew, or roast, having a meal ready for you at dinnertime is hard to beat. And this is one of my favorite easy slow cooker dishes. While most people make this with pinto beans, my family prefers northern beans. Serve with cornbread muffins or brown rice, and you’ve got a meal.

 

Ingredients:

1 lb dried northern beans

4 chicken bouillon cubes

½ t onion powder

¼ t garlic powder

1 lb ham pieces

8 cups water

Salt and pepper, to taste

 

Directions:

Rinse beans and place in pot on the stove. Cover with water and bring to a boil. Take off the heat, cover, and let sit for about 30 minutes. Drain water from beans and transfer beans to slow cooker.

Add bouillon cubes, onion powder, garlic powder, ham pieces, and water to beans in slow cooker. Cook on low for 6-7 hours or high for 3-4 hours. Add salt and pepper to taste before serving.
