Lima Beans with Bacon
 Bacon! Isn’t everything better with bacon? This lima bean dish takes advantage of that thought, adding crispy bacon pieces at the end of cooking. I adore this mixture of textures – the soft, creamy beans and the crispy bacon pieces pair so well together. Your mouth and taste buds will thank you.

Ingredients:
1 lb frozen lima beans
2 cups chicken stock
½ cup water
1 T butter
½ t onion powder
¼ t salt
⅛ t pepper
6 slices bacon
Directions:
Place beans, chicken stock, water, butter, onion powder, salt, and pepper in a medium pot set over medium high heat. Bring to a boil, then reduce heat to low, cover, and simmer 20 – 25 minutes, until beans are tender.
While beans are cooking, cook bacon and crumble into pieces.
When beans are tender, drain most of the liquid, leaving ¼ – ½ cup with the beans. Add bacon and additional salt and pepper, to taste.
