Creamy Broccoli Salad

recipe-entreeWhat? You want more bacon? I am more than happy to comply. I have seen (and tasted) many variations of this recipe at potlucks throughout my life. Most of them have bacon and include pieces of raw onion, but I have never cared for that strong taste, or after taste. In my recipe, I replace the raw onion with onion powder, thereby satisfying my need for flavor and my desire for a salad that won’t leave me tasting onion in my mouth for days to come.

Ingredients:

4 cups broccoli florets
8 oz cheddar cheese, cut into ~ ¼” cubes
8 slices bacon, cooked and crumbled
¼ cup sliced or slivered almonds, toasted
½ cup mayonnaise
½ cup Greek yogurt
1 T lemon juice
1 T sugar
¼ t salt
¼ t onion powder
⅛ t pepper

Directions:

Place broccoli, cheese, bacon and almonds in a bowl. Toss together.

In a separate bowl, combine mayonnaise, yogurt, lemon juice, sugar, salt, onion powder, and pepper. Pour over broccoli mixture and stir until well combined. Serve cold.
