Chocolate Chip Muffins

recipe-dessertMy daughter has had several sleepovers lately, and I’m always trying to decide what to feed the girls in the morning. My go to recipe has become chocolate chip muffins. I know, I know, they’re more like dessert than breakfast, but we don’t have them very often so I consider it an okay splurge. And the girls are fed and happy. Happy girls equals happy momma!

Ingredients:

1½ cups white flour

½ cup whole wheat flour

1 T baking powder

½ t salt

¼ t cinnamon

2 large eggs

½ cup heavy cream

½ cup milk

¾ cup brown sugar

4 T unsalted butter, melted

1 t vanilla

1 cup chocolate chips

Directions:

Preheat oven to 400º. Grease muffin pan.

In a large bowl, whisk together flours, baking powder, salt and cinnamon.

In a separate bowl, combine eggs, cream, milk, brown sugar, butter and vanilla. Add wet mixture to flour mixture and mix until dry portion is moistened; the batter should not be smooth. Mix in chocolate chips.

Divide batter among muffin cups and bake for 20-25 minutes, until toothpick comes out clean. Let cool for 2 minutes before removing from pan. Serve warm or cool on a wire rack.

Makes 12-14 regular size muffins.
