Chocolate Chip Muffins
My daughter has had several sleepovers lately, and I’m always trying to decide what to feed the girls in the morning. My go to recipe has become chocolate chip muffins. I know, I know, they’re more like dessert than breakfast, but we don’t have them very often so I consider it an okay splurge. And the girls are fed and happy. Happy girls equals happy momma!
Ingredients:
1½ cups white flour
½ cup whole wheat flour
1 T baking powder
½ t salt
¼ t cinnamon
2 large eggs
½ cup heavy cream
½ cup milk
¾ cup brown sugar
4 T unsalted butter, melted
1 t vanilla
1 cup chocolate chips
Directions:
Preheat oven to 400º. Grease muffin pan.
In a large bowl, whisk together flours, baking powder, salt and cinnamon.
In a separate bowl, combine eggs, cream, milk, brown sugar, butter and vanilla. Add wet mixture to flour mixture and mix until dry portion is moistened; the batter should not be smooth. Mix in chocolate chips.
Divide batter among muffin cups and bake for 20-25 minutes, until toothpick comes out clean. Let cool for 2 minutes before removing from pan. Serve warm or cool on a wire rack.
Makes 12-14 regular size muffins.
