Overnight Slow Cooker Oatmeal
Oatmeal is one of my favorite breakfasts. It doesn’t have to be cold outside for me to enjoy a big, steaming bowl of it. And it’s amazingly wonderful to wake up to it ready to eat in the slow cooker. It may seem like a lot of liquid in this recipe for the amount of oats, but the oats will soak it up and expand. The result is a beautiful and creamy oatmeal. The leftovers refrigerate well, too. Just add a little more cream or milk before heating in the microwave to get that creaminess of fresh cooked oatmeal.
Ingredients:
1 cup steel cut oats
1 cup cream
1 cup milk
2 cups water
1 T maple syrup
1 t vanilla
1 t cinnamon
¼ t salt
⅛ t nutmeg
Directions:
Spray slow cooker with cooking spray. Mix all ingredients in slow cooker. Cook on low for 8-9 hours. Serve with cream or milk and sweetener to taste. Top with fruit, if desired.
