Slow Cooker Pork with Apples

recipe-entreeIn my never ending quest for easy slow cooker recipes, I decided to try the classic pork-apple combination.  I found this dish to be absolutely delicious.  However, my daughter did not like the consistency of the apples (they did turn to mush) and my husband did not like the flavor combination of pork and apples.  So, I must continue my search.

 

As I mentioned above, the apples were quite mushy at the end of the cooking time.  If you do not like this, try cutting the apples into fourths and cooking a shorter time.  You could even take the pork out at the end of cooking time and mix the remaining juices and apples together to make a kind of chunky sauce to spoon over the pork.

 

Ingredients

2 – 3 lb pork loin

6 apples

½ cup apple juice

2 T brown sugar

½ t ground ginger

½ t cinnamon

½ t salt

¼ t black pepper

 

Place pork in slow cooker.  Core apples, cut into eighths, and place on top of pork.  In a separate bowl, whisk together rest of ingredients and add to slow cooker.  Cook on high 4 – 6 hours or low 8 – 10 hours.  Serve over hot, buttered egg noodles.
