Taco Casserole

recipe-entreeThis is the ultimate quick weeknight meal.  There are so many different ways to serve this dish (see serving options at the end of the cooking instructions) that everyone in your family will find a way that suits them.

Ingredients

1 pound ground beef

1 15 oz can black beans, drained and rinsed

1 15 oz can tomato sauce

1 ½ cups frozen corn

2 T taco seasoning

1 ½ cups shredded cheddar cheese

Toppings of your choice:

            Tortilla chips or taco shells

            Shredded lettuce

            Diced tomatoes

            Sour cream

Heat oven to 400ºF.

Brown beef in a large skillet set over medium-high heat.  Drain and return to skillet.  Add beans, tomato sauce, corn, and taco seasoning.  Bring to a boil, reduce heat to low and simmer 5 minutes.

Transfer mixture to baking dish.  Sprinkle with cheese, and bake 10 minutes.

 

Serving options:

Taco Casserole – break shells on top of beef mixture in baking dish, serve with toppings on the side.

Tacos – spoon beef mixture into taco shells and add desired toppings.

Taco Salad – break up tortilla chips or shells on plate, add handfuls of lettuce, spoon beef mixture on top of lettuce, add desired toppings.
