Strawberry Cake Mix Cookies

Valentine’s Day is almost here – who couldn’t use a little pink in their dessert for this occasion?  These cake mix cookies do just that by starting with a strawberry cake mix, and they are as easy as they come to make.  If you prefer, skip the chips and frost with cream cheese frosting, adding red sugar sprinkles on top.  Share this festive treat with all of your loved ones this year.

Ingredients

1 box strawberry cake mix

½ cup unsalted butter, softened

2 eggs

1 t vanilla

1 cup vanilla chips

Directions

Preheat oven to 350ºF.  In a mixing bowl, beat together butter, eggs, and vanilla until well combined.  Mix in cake mix until batter is smooth.  Stir in vanilla chips.

Drop cookies by tablespoonfuls about 2 inches apart onto cookie sheet that has been lightly sprayed with cooking spray.  Bake for 10 – 12 minutes until cookies are set and edges begin to slightly brown.  Remove cookie sheet from oven and let cookies cool on sheet about 2 minutes.  Remove to a wire rack to finish cooling.
