Slow Cooker Beef in Mushroom Sauce

recipe-entreeThis is true comfort food to me. Tender pieces of beef in a rich, creamy mushroom sauce. Yum! It would be perfect served over buttered egg noodles with roasted asparagus.

Ingredients:

1 T olive oil

1 medium onion, diced

12 oz mushrooms, sliced

2 lbs lean beef stew meat

1 can cream of mushroom soup

1 pkg dry onion soup mix

1 cup beef stock

¼ t black pepper

⅛ t garlic powder

 

Directions:

In a large skillet, heat olive oil over medium-high heat. Add onion to hot oil in skillet. Cook, stirring frequently, until onion is soft and slightly browned, about 5-7 minutes.

Add mushrooms to skillet with onions and cook until mushroom are soft and slightly browned, another 5-7 minutes.

Add beef to skillet with onions and mushrooms and cook until browned. Transfer mixture to slow cooker.

Whisk together mushroom soup, onion soup mix, and beef stock. Add soup mixture along with pepper and garlic powder to slow cooker with beef mixture. Cover and cook on low 6-8 hours or high 3-4 hours.
